White Chocolate Bread Pudding

This is one of my all time favorite recipes. I made it this weekend for a party that we had and it was a HIT. There was none left by the end of the party! It is so easy to make!!!

1 large loaf of stale French bread, cubed

16 oz Heavy Cream

16 oz Milk (skim is fine)

2 bags of white chocolate chips

1 cup of sugar

1 tsp vanilla extract

2 eggs

First thing you want to do is to make the french bread stale. I use Reising’s Poor Boy bread but you can use any kind that you can find. Cut up the bread into cubes and lay it out onto a baking pan in a single layer. Leave it out uncovered for a few days so that it get stale. If you are pressed for time then you can bake the bread at a very low setting, turning the bread so it gets evenly toasted.

In a microwave safe bowl pour in the chocolate chips, cream and milk. Microwave on high for 30 second to 1 minute increments until the chips are melted and the milk and chips are combined.

In a separate bowl mix the sugar, eggs and Vanilla. Mix until smooth and combined.

Next you need to slowly add the cream mixture to the egg mixture. Use a ladle and put one ladle full of the cream mixture into the egg mixture. Stir. Keep adding a ladle fool of cream mixture at a time until it is all combined. Doing it this way will insure that you don’t end up with scrambled eggs!!!

Pour the mixture over the bread. You can either do this in a bowl or in a deep pan. I prefer using a bowl with a liquid tight lid.

Make sure that all of the bread is coated. If you are pressed for time then you can bake it right away but it is best to let the bread pudding rest in the fridge over night. I let this batch sit for 24 hours. Since I use a liquid tight lid on a bowl all I have to do is flip the bowl every now and then to make sure that every piece of bread is absorbing the same amount of liquid. If you are using a pan then stir the mixture making sure the top pieces go the bottom and the bottom pieces to the top.

Bake at 325 for 30 to 45 minutes. You want most of the liquid absorbed and the top to be lightly browned.

As you can see, it does not last long!!! If you try this out let me know what you think!!!

17 years ago today…

17 years ago today something wonderful happened. Stefanie became a mom for the first time when her son, Tim, was born. Little did anyone know that the birth of this little bitty baby boy would change the world and life as we knew it. Tim is not your typical “teen-age” boy.  Even at the age of 17 Tim is true to who he is, he is confident and loving, he is the most wonderful child that I have ever had the pleasure of meeting. This is all due to his mother and the awesome relationship that they have. Tim is the man that he is today because of his mother and Stefanie is the woman she is today because of her son.

I strive to be like Stefanie when it comes to mothering because honestly, if she raised this unbelievable child then she must know a thing or two about mothering! It is such a honor just to know Tim, to have him in our family, to be in his presence… to know that he loves unconditionally and has a heart so big that he loves everyone that he meets. To see him care for his brothers, to hear how much he loves his mother, to see it is an awesome site.

I wanted to take a second out of our crazy lives and wish you both a very Happy Birthday!

Happy 17th Birthday Tim!

Happy Birth-day Stefanie!
